Bob’s ChocChocChip Oat Cookies -- Healthful Enjoyment!
My cookies feature a delicious and healthful hormonal balance of protein (glucagon), carbohydrates (insulin), and monounsaturated fat which can contribute to healthful aging*. This is in contrast to most other chocolate chip cookies which consist primarily of carbohydrates that can cause unhealthful overproduction of insulin. Note that monounsaturated fats such as walnuts, contrary to popular opinion, actually burn fat. The only refined sugar is in the commercially made chocolate chips. Recipe makes 70 cookies of 50 calories each
RECIPE
2 eggs (whites only if desired)
2 tsp vanilla
¼ cup olive oil
7 cups water
4 tsp stevia powder (non-caloric, non-carb)**
1/2 cup unsweetened cocoa powder (I prefer Ghiradelli's)
1 ½ cups oat flour
3 cups uncooked old fashioned rolled oats
1 cup chopped walnuts
2 1/2 cups vanilla flavored soy protein powder
1 tsp baking soda
1 tsp cinnamon
½ tsp salt (optional)
2 cups chocolate chips

**KAL brand stevia powder (My palate says KAL is the best tasting brand)
BAKING INSTRUCTIONS
1. Heat oven to 350 F
2. Mix water, oil and stevia until creamy
3. Add eggs and vanilla, beat well (just egg whites if desired)
4. Add combined oat flour, baking soda, cinnamon, and salt: mix well
5. Stir in rolled oats, chopped walnuts, and chocolate chips; mix well
6. Drop rounded tablespoonfuls onto vegetable-sprayed cookie sheet
7. Bake 10-12 minutes
8. Cool one minute on cookie sheet, remove to wire rack
